01:01:01
why are navel oranges not a good choice
MFP: Vera M. Bullard
01:01:21
I'll ask in a moment.
Laura S
01:01:51
She said they can turn bitter
MFP Sue M
01:03:59
navel oranges can turn bitter in the freezer but are great for canning and drying
Sandy Radzik
01:04:26
thanks
Sharon Lovejoy
01:04:50
Somebody needs to mute!!!
Rowan Brush
01:09:56
Can you sterilize the canning jars in the oven or the dishwasher before you put the fruit in?
Laura S
01:11:26
Has anyone been able to find good lids yet?
Rosa Greenhalgh
01:12:24
Does the water added to segments take away some of the flavor like it would doing berries or some other fruit? Vs. doing in a light syrup?
Tiffiny
01:12:36
I found Ball brand lids at Walmart that worked grear
MFP: Vera M. Bullard
01:12:38
If process over 10 minutes they don't need to be sterilized. Fran will sterilize her jars in a canner or steam canner beforehand.
MFP Sue M
01:13:23
only need to sterilize jars if processing less than 10 minutes. just heat jars in the canner you're going to use
russcarpenter
01:13:47
could you do this with mandarin sections?
Michael Shatto
01:15:48
can you use a regular pot, or do you need a special type of canning pot?
Carol McIntyre
01:15:54
Can you use an InstaPot to can safely?
MFP: Vera M. Bullard
01:17:04
You can use any pot as a boiling water canner, as long as you have at least 1-inch of water covering the jars.
MFP: Vera M. Bullard
01:17:29
It should have a heavy bottom and you will need a rack for the bottom.
MFP: Vera M. Bullard
01:17:43
Sue will discuss it more.
Carol McIntyre
01:17:48
Thanks! That makes sense.
Annie Christy
01:23:52
can’t see what she shows to her left. No camera?
Cher
01:24:35
Can a sugar substitute (ex: erythritol, a sugar alcohol) be used in place of sugar?
Rosa Greenhalgh
01:25:05
Annie I'm on Speaker view (not gallery) and can see both screens side by side - front and camera view
April Wall BeIntentional.net
01:25:41
Is there any problem with organic sugar vs non?
Michael Shatto
01:26:42
Are there alternatives to pectin or can you make your own?
MFP: Vera M. Bullard
01:28:07
Michael she will answer your question right now.
Annie Christy
01:29:05
Rosa, thanks. I must have an older computer as I’m on speaker view also.
MFP: Vera M. Bullard
01:29:57
If you escape out of full screen you can get to gallery view.
MFP Pamela
01:31:04
Annie, scroll through the names and you'll find a small view of the second camera. That's what I had to do.
Cher
01:31:17
Does that mean that no sugar jams/jellies made with the alternate pectins aren't shelf stable?
Annie Christy
01:36:29
Pam, Thanks. That worked!
Rosa Greenhalgh
01:37:31
For jam/jelly that has a 5" processing time I usually process for 10". Will that possibly ruin the ability for the jam to set - or is that fine as far as quality of product?
MFP: Vera M. Bullard
01:38:27
Rosa, I'll ask in on moment when we get to processing times.
MFP: Vera M. Bullard
01:39:18
But, it should be fine, it will just over cook the jam/jellie making it firmer.
Annie Christy
01:39:39
what brand of scooper and funnel is Sue using?
MFP: Vera M. Bullard
01:40:26
Progressive
Rosa Greenhalgh
01:40:40
That's a beautiful pot. Maslan? Can you please share the brand and size?
MFP: Vera M. Bullard
01:40:41
You can find it on Amazon and other retailers.
MFP: Vera M. Bullard
01:41:07
That is a jam pot, I don't believe they are in production anymore.
Sharon Lovejoy
01:41:28
Sue, In Britain I saw a woman making jellies in a large copper pot. It wasn’t lined. What’s your feeling about this?
Sharon Lovejoy
01:42:56
THANKS!!
Cher
01:45:47
Very nifty hot plate. What brand? Does it fit large pressure canners?
MFP: Vera M. Bullard
01:47:46
Not sure on the brand. It is a butane burner and it works great for the pressure canner.
Rosa Greenhalgh
01:50:02
If I put my pressure canner rack on top of the steam canner rack to get that smooth surface for my small jars? Will that impede the steam in any way that would make the process unsafe?
theresa dy
01:52:21
can you recommend a pressure canner and where to buy?
wendt
01:53:32
Is it ok to soak citrus in vinegar for 10 minutes to clean off the wax, etc, before I finish washing and brushing the fruit. Or is something else better?
Gordon
01:53:53
Is it not OK to use metal pots and implements in the cooking process?
russcarpenter
01:58:33
you all are doing such a great job! wow. i am impressed.
Rowan Brush
01:59:01
I have a meyer lemon tree. Do you need to make any adjustments to the recipe for this type of lemon.
Gordon
01:59:06
I may have misunderstood. Was the pot Sue used "lined"?
MFP: Vera M. Bullard
01:59:08
Thank you
wendt
01:59:09
Where do you find a steam pot you are using.
Rosa Greenhalgh
01:59:40
What size is the Maslin pot you used?
Laura S
02:00:15
The steam canner is made by Victorio products.
Rosa Greenhalgh
02:00:47
Roots and Branches is a steam canner - replaced the Victorio brand
Rosa Greenhalgh
02:01:33
THank you! for the size
MFP: Vera M. Bullard
02:03:02
You can get a steam canner from the hardware store (like Aces or Tractor Supply) and other stores (like Walmart) and online (Like Amazon).
MFP: Vera M. Bullard
02:03:47
There is also a combo canner available, I'll ask Sue to talk about it.
